Fiorenzuola d’Arda Bistrot: discovering our producers II

The people and stories that create the territory's culinary delights

Pastificio Fontana's tortelli, a Piacenza specialty,  the sweet flavor of Chiarli’s Lambrusco to bring out the sweetness of the Percossi family's potatoes. And to round it all off, a selection of desserts from Pasticceria Perazzi and a taste of the delicious Graffione (chocolate covered cherry) from Chocolaterie Bardini. Is this a menu for a special occasion? Not just that. A tasting itinerary to discover the flavors of the great local Italian culinary traditions? Almost. These are the products and the flavors you will experience in the new Fiorenzuola d'Arda Autogrill Bistrot, conceived for a new way of catering on the road.

Following the first meeting with some of the producers of Fiorenzuola d'Arda Bistrot, today we will get to know five other local artisan producers that contribute to the enrichment of what this Bistrot, located in the famous bridge-style structure, the first Autogrill in Europe built over a motorway, has to offer.

Pastificio Fontana: the art of making tortelli with a 'tail'

Pastificio Fontana, founded in 1967 in Piacenza, makes fresh egg pasta, filled following traditional recipes from Piacenza and Emilia, using the most innovative systems for the production and storage of their products. Among the most famous of these are the tortelli with a 'tail' stuffed with ricotta and spinach, a typical specialty from Piacenza, with the traditional 'tail' shaped by hand by the pasta artisans.

Azienda agricola Eugenio Percossi: organic potatoes of a superior quality

The Percossi family has grown potatoes in the fertile valley of Fucino since 1925, in the province of Aquila, following the principles of biodynamic and organic agriculture that guarantee their superior qualities. Their small production of purple potatoes with their striking violet flesh and skin, a variety rediscovered by the owners, rich in selenium and anthocyanins, is a feather in their cap.

Among these, the first Lambrusco in history to receive the most prestigious recognition from both Italian and international wine critics, starting with the prestigious "Honorable Mention" received in Paris in 1900 during the Universal Exposition.

Pasticceria Perazzi: simple ingredients and a secret recipe for a unique cake

The Pasticceria Perazzi was founded in 1982 in Vigolo Marchese, a hamlet of the medieval village of Castell'Arquato. Among its finest products the Vigolo cake stands out, made following a secret recipe with simple ingredients of the best quality, like flour, butter, sugar, cocoa and baking powder.
